Mexican Spicy Cuisine - is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The basic staples are native foods, such as corn, beans and chili peppers. Europeans introduced a large number of other foods, the most important of which were meats from domesticated animals (beef, pork, chicken, goat, and various herbs and spices.

Corn Avocado Salsa Cake - Corn seasoned with onions, egg, avocado pan fried, served with rocket, coriander and lime juice.
Pork Chipotle - Pork cooked with chilli powder, oregano, sugar and seasoning. Grilled serve sliced in warm tortillas chipotle sauce, with pickled onions and coriander.
Mexican Chilli Chicken - Chicken cooked in olive oil, with onion, tomatoes, chills, cumin, chorizo, and cannellini beans, with a sour,cream avocado cream, coriander, lime dip.
Mexican Almond - Diced pork, cooked in tomato purée, cinnamon and thyme, orange zest, onions, garlic, chipotle paste, served with a almond mole sauce dip, with thin tortillas.
Rice - Boiled bed of white rice.
