Russian Fine Cuisine - Russia's great expansions of culture, influence, and interest during the
16th–18th centuries brought more refined foods and culinary techniques,
as well as one of the most refined food countries in the world. It was
during this period that smoked meats and fish, pastry cooking, salads
and green vegetables, chocolate, ice cream, wines, and juice were imported from abroad.
Fish Zalivnoe - Salmon cooked in fish stock, bay leaf, dressed with grated carrots, onion, parsley, lemon, salt olive oil, served
Deruny Cheese Potato Pancakes - Pancake batter, poured into a hot butter pan, filled with, grated onion, potatoes peeled
grated, salt, black pepper, cheese, sour cream, served with rocket.
Beef Stroganov Estouffade - Tenderloin beef diced cooked in the pot with, berries, butter, estouffade stock, Dijon mustard, salt and pepper to taste seasonings sour cream.
Chicken Julienne - Chicken breast cooked in mushrooms, butter, onions, grated nutmeg, Swiss cheese grated, sour cream,
seasoned with salt, black pepper.
Potatoes - Mash potatoes and seasonal vegetables.
